Ingredients

    2 tbsp oil
    1 onion - chopped
    2 cloves garlic - chopped
    1 chicken breast - in chunks
    3 stalks celery - chopped
    3 x 1/2 peppers ( red, yellow and green) - chopped
    8 medium mushrooms - chopped
    1 tin chopped tomatoes
    8 cherry tomatoes - halved
    stock cube

Directions

heat oil - add onions and garlic to soften
add chicken breast chunks to brown
add other veg for about 5 mins
add tin tomatoes and simmer for 20 - 30 mins
