Ingredients

    1.25 lbs uncooked shrimp
    1 cup uncooked quinoa
    2 cups chicken broth
    1 large clove garlic
    1 can black beans, low sodium (drained)
    1 can sweet corn, low sodium (drained)
    1 large avocado
    1 tbsp olive oil
    Juice of one fresh lemon
    1/2 cup Cilantro
    1/4 cup or more Green onion or chives
    1/4 cup Marzetti Pomegranate dressing
    3/4 cup white wine
    Salt and pepper to taste

Tips

Add in or substitute other veggies as preferred


Directions

Cook quinoa with chicken broth and let cool. While quinoa is cooking, cook shrimp with olive oil, garlic, white wine, salt and pepper. Drain the shrimp once it is cooked and set aside to cool.

Chop cilantro, onions, and avocado and combine with beans and corn. Mix in the cooled quinoa and shrimp. Add lemon juice and pomegranate dressing and mix well.
