Ingredients

1.5 lbs London Broil
1 cup beef broth
2 cans Rotel Canned Tomatoes with Habanero
1 cup chopped onions
1 cup chopped green bell pepper
1/2 cup chopped jalapeno pepper
*Other spicy peppers as desired
Tips
You can serve in low-carb tortillas with light sour cream and fat free shredded cheese for a healthy alternative to regular shredded beef tacos.
To cut the cheese and a few of the carbs, you can serve over rice.
To serve as a simple side dish and skip the added carbs altogether, brown and dry out the shredded beef in a skillet over medium heat.
Directions
Chop onions and peppers. Put meat in bottom of slow cooker and cover with onions and peppers. Pour 1 cup beef broth over all. Cook for 6 - 8 hours.
