Ingredients

1 lb of lean ground beef
1 medium sized onion (0.5 cup)
0.5 cup of baby carrots
2 medium zucchini (1.5 cup)
1 block of Tofu (texture to liking- soft preferred)
2 cups Snow Peas, fresh (ends snipped off)
1 package of Sun-Bird Chicken Lettuce Wraps Seasoning Mix- Asian Fusion Recipe
1/4 cup water
1 Tbsp. light Soy Sauce
1 tsp. brown sugar or sugar substitute
Tips
Do not spoon all of the sauce at one time. Spoon half of it and taste after 15 minutes to determine if more sauce is needed.
Directions
In a large nonstick pan, brown 1 lb of lean ground beef and break it into tiny pieces. Slice a medium sized onion and lay flat on top of the ground beef and cover the pan for 3 minutes. Take the lid off and stir in baby carrots, zucchini and cubed tofu. Cover the pan and wait until the zucchini softens. Meanwhile, prepare the sauce by adding 1/4 cup of tap water into a medium sized bowl. Into the bowl add 1 tbsp. of light soy sauce, 1 tsp. brown sugar or sugar substitute, and the whole 1.25oz package of Sun-Bird Chicken Lettuce Wraps Seasoning Mix. Combine completely until seasoning is fully incorporated into the liquid. When zucchini is soften, add in the 2 cups of snow peas and stir. Spoon the sauce into the pan in a drizzling motion. Lower the heat and cover for an additional 15 minutes or until the snow peas' texture are to your liking. Serve over a bed of short grain rice or eat by itself.
