Introduction

Ingredients

    4 c of low sodium chicken broth (any broth)
    1.5 bags of Baby Spinach
    8 c of water
    1 sm box of Baby Portobello mushrooms 8oz's
    3 summer squash small
    1 large bunch of fresh parsley
    olive oil 2-3 T
    1 large red onion

Tips

I usually make my chicken broth from scratch but it's not needed. If you use homemade broth you should add a teaspoon or two or three of salt to taste. You can use any low salt broth just fine. And a veg broth is fine also.


Directions

Put the liquids into large dutch oven pan and high heat, wash all fresh veg. Slice up all veg (but spinach) into med to small slices to shorten cooking time. Add everything but the spinach, turn down heat if it's boiling, you want a med simmer going for about 10-15 min's depends how long it takes to cook the veg's. When squash, mushrooms and onion are soft add spinach, cook for 5 min. Allow to cool for 30 min to 1 hour before using stick blender (so you don't melt the plastic ), use a stick blender to blend for one or two minutes, depending upon how fine you want the veg pieces.

Serving Size: Makes about six 2 cup servings or twelve 1 cup servings
