Ingredients

1.5 c mixed dried bean(any mix is fine)
3/4 slices cooked, chopped bacon(apple smoked)
1 c. chopped onion
1 c. sliced carrotts
2 c. sliced zucchinni
6 cups chopped kale/spinach
3 garlic cloves-chopped/minced
3 c. water (may need more-use ownjudgment as soup cooks down)
32 oz(4c) chicken broth/beef/lw sodium
1 can tomatos
2 tb tomato paste
salt/red pepper to taste
Directions
Soak beans in water overnight in fridge or for 8 hours.
Start beans in the broth and water on medium.
Prep veggies while bacon cooks.
Saute veggies, garlic, kale (not tomatos) lightly. Then add to soup along with chopped bacon and all other ingrediants.
Reduce heat and cook on low for at least 2 hours and up to 5 hours. Add water/broth as needed.
Serving Size: Makes at least 8 servings
