Ingredients

    1 can enchilada sauce
    1 can chili seasoned black beans
    1 can stewed tomatos
    2 cups fresh baby spinach cleaned
    1 cup wild rice
    chilli powder
    cumin
    salt
    pepper
    1 whole white onion
    3 cloves minced garlic

    2 cups water


Tips

sour cream, salsa, corn bread all make great additions to this high protein low calorie meal.


Directions

pour water, rice, tomatoes, beans, onion, garlic in baking dish. Stir till mixed. Place spinach in and stir till lightly coated. Salt and pepper to taste ( not too much since using canned items) place chicken on top sprinkle with chili powder and cumin flip over sprinkle with cumin. Pour can of enchilada sauce over chicken, sprinkle with chili powder. Cover and bake 45 min or till chicken is cooked through and tender.
