Ingredients

    1 medium tomato, diced

    1/2 medium onion, coarsely chopped

    1 can ((RINSED) black beans

    1 package of low carb soft tacos

    1 package ((dry mix)) enchilada sauce

    1 package taco seasoning (reduced sodium)

    1/4 cup water (for taco seasoning)

    3 cups water (for enchilada sauce)

    1 roll - 93% lean ground turkey

    1 8 oz. package KRAFT 3-cheese Crumbles

    1 can tomato sauce - to add to enchilada sauce

Directions

1. In a medium size saucepan - brown ground turkey. (drain off fat - it any)

2. Over medium/high heat - add coarsely chopped onions, diced tomatoes, can of RINSED black beans, reduced sodium taco seasoning & water to browned meat.

3. Allow mixture to come to boil, then reduce heat and allow to simmer for an additional 5 minutes.

4. ((prepare enchilada sauce according to pouch instructions))

5. PRE-HEAT OVEN TO 350 DEGREES

6. Add 1 cup of enchilada sauce to the bottom of a 13x9x2 baking dish.

7. Next - add approximately 1/4 cup of meat mixture to the center of each low carb soft taco shell - roll up & place face down in baking dish.

8. Pour remaining sauce over enchilada's. Next - remaining cheese to the top of enchilada's.

9. Bake uncovered at 350 degrees for 20 minutes.
