Introduction

Ingredients

    Zatarain's yellow rice (1 box prepared)
    1 c. bay scallops
    1 c. shrimp
    8 oz. tilapia fillet cut into about 1x1 in pieces(about 2 fillets)
    1 c. diced red pepper
    1 c. diced onion
    1 whole fresh pineapple chopped
    unsalted butter for sauteeing (about 4 tbsp)

Directions

Prepare yellow rice according to box stovetop directions.
Sautee diced pepper and onions in butter until soft; set aside.
Sautee chopped pineapple in butter until golden and carmelized; set aside.
Sautee seafood until cooked through; season to taste

Mix all ingredients in large bowl and serve.
