Introduction

I have made a few substitutions to my favorite banana muffin recipe in an attempt to make them healthier. I have made a few substitutions to my favorite banana muffin recipe in an attempt to make them healthier.
Number of Servings: 12

Ingredients

    4 medium bananas
    1/2 c. Splenda (original recipe calls for 1/2 - 1 c. sugar)
    1 slightly beaten egg
    1/3 cup melted margarine or butter
    1 tsp. baking soda
    1 tsp. baking powder
    1/2 tsp. salt
    1 1/2 cups flour (I used a combination of white & wheat)

Tips

Walnuts or chocolate chips could also be added to this recipe.


Directions

Mix the mashed banana, sugar, egg and margarine together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients together, being careful not to over-stir! Pour into greased muffin tins or paper cups and bake at 350 degrees for approximately 20 minutes.
