Introduction
Hurry to curry your leftover turkey! This is a wonderful use of leftover Thanksgiving turkey, as it is light and delicious, and definitely a change of taste from all those savory holiday flavors. Can’t wait for Thanksgiving to try it? No problem. Just pick up some roasted turkey breast from the deli, or try it with roasted chicken. Hurry to curry your leftover turkey! Ingredients

2 tablespoons low- or no-fat sour cream
2 tablespoons plain yogurt (Greek yogurt adds more protein)
1 tablespoon fresh lime juice
1 tablespoon honey
1 teaspoon curry powder
¼ teaspoon salt
¼ teaspoon freshly ground black pepper, or to taste
2 cups chopped cooked turkey
1 cup seedless red grapes, cut in half
½ cup chopped celery
¼ cup chopped red onion
2 tablespoons (or more!) roasted cashew pieces (can also substitute pistachios or almonds, if you like)
Directions
Combine first 7 ingredients in a large bowl (through the black pepper). Add turkey, grapes, celery, onion and cashews. Stir gently to combine. Makes 4 servings (serving size about 1 cup – about 310 calories).
You can easily double the recipe – just make a little more of the dressing.
Tastes great served on a bed of mixed greens and/or with mini pita rounds.
