Ingredients

    2 free range eggs
    1 teaspoon soy sauce
    few drops of sesame oil
    pepper
    2 teaspoons grapeseed oil
    2 tablespoons sliced onion
    1/4 cup beansprouts
    1/2 shallot (green onion), chopped
    3 large raw/green prawns, blanched and cut in half
    1 teaspoon oyster sauce
    freshly cracked pepper

Tips

You can use cooked prawns and leave out the blanching. You can use chicken, or make a vegetarian omelet with mushrooms instead.


Directions

1. In a bowl, whisk the eggs then season with soy sauce, sesame oil and pepper.
2. Heat a pan or wok until very hot and add in grapeseed oil. Fry the sliced onion and beansprouts, and when the onion is softened then pour in the egg mixture. Move the omelet around with a wooden spoon to let the liquid escape.
3. While the eggs are still runny in the middle, add prawns and spring onion to one side and fold the omelet in half and allow the omelet to sit in the pan over low heat for 2 minutes.
4. To serve, drizzle the omelet with oyster sauce and freshly cracked pepper.
