Ingredients

3/4 cup white flour
3/4 cup whole wheat flour
1/4 cup milled flax seed
1/2 tsp. baking soda
2 tsp. baking powder
1/2 cup pourable Splenda
1 tsp. cinnamon
1 Tbsp. chia seed, soaked in the
3 Tbsp water
1 Tbsp. olive oil
1/4 cup Egg Beaters
1/2 cup plain night soy milk
1 1/2 cups chopped, peeled apples
2 Tbsp. unsweetened applesauce
1/4 cup dried cranberries
1/2 cup chopped walnuts
Tips
These are very moist and should be eaten soon or individually wrapped and frozen.
Directions
Preheat oven to 400* (375* convection)
Soak chia seeds in the water for about 15 minutes
Spray 12 hole muffin pan with cooking spray
Stir together dry ingredients and set aside.
Mix together remaining ingredients, except nuts and cranberries. Pour wet mixture into dry mixture and stir well. Stir in cranberries and walnuts. Spoon into muffin pan wells. Bake about 20 minutes until toothpick comes out clean and tops are golden brown.
