Ingredients

    1 head cauliflower
    3 Tbsp extra virgin olive oil
    Salt and pepper to taste
    Drizzle oil over cauliflower and season with salt and pepper. Roast at 350 degrees for aprox. 35-45 mins.
    Lemon Caper Vinegarette Dressing:
    Whisk together
    2 tbsp. olive oil
    1 tsp. capers (chopped)
    couple sprigs parsley (chopped)
    Zest of a lemon
    Juice of a lemon
    1 tsp. Dijon Mustard
    Salt and Pepper to taste.

Directions

Roast whole head of cauliflower on baking sheet for 35-45 mins. Whisk ingredients for vinegarette and pour over baked cauliflower.
