Yummy! The smokey flavor of the turkey leg is great! I skin the turkey leg after cooking to make this a slightly healthier version of collard greens. Yummy! The smokey flavor of the turkey leg is great! I skin the turkey leg after cooking to make this a slightly healthier version of collard greens.

Ingredients

    8 cups of fresh collards (washed and cut)
    1 med to lrg turnip (washed and cubed)
    1 to 2 smoked turkey legs (bone and remove skin after cooking, cube or shred)
    2 tsb garlic powder
    salt, pinch
    1 tsp pepper



Directions

In a large pot place turkey leg(s), cover with water, place on stove and bring to a boil. Continue cooking w/lid slightly ajar while you start cleaning the greens. In a clean sink slowly fill with water as you strip the greens off the stalk. After all are stripped, wash and cut greens. Rinse. Wash turnip, cut ends off, and cube. Add greens to pot with turkey leg(s). Don't worry they will cook down. Cook with lid slightly ajar for 1 hour. Add seasoning and cook additional 30 mins. Remove turkey legs from pot to cutting board. Remove skin and discard. Trim meat off bones and cube or shred meat and return to pot. Cook an additional 5 minutes and enjoy!
