Introduction

I was cooking quinoa because I needed some for a muffin recipe. I decided to cook some red lentils as well, and when I was done I mixed it together and found it is wonderfully filling and tasty. Ingredients

    1 Cup red lentils
    3 Cups water
    curry powder
    dried onions, garlic, or shallots
    salt
    Earth Balance
    coconut oil

    1 cup quinoa
    2 cups water


Tips

This keeps well in the refrigerator. I make a double recipe and keep it around for lunches during the week. Serve with greens for complete nutrition.


Directions

Bring 3 cups water to boil. Add red lentils and return to boil. Add dried onions, shallots, and/or garlic as desired. Add 1-2 tablespoons of your favorite curry powder. (I love Penzeys Maharaja curry powder). Cook for 30-40 minutes, until lentils are mushy. Add salt, Earth Balance and coconut oil. Stir.

In a separate pot, bring to boil 2 cups of water. Add quinoa and return to boil. Turn heat down to low and simmer for 15 minutes until the water is absorbed and you see the characteristic spirals.

Mix the dal (lentil mixture) with the quinoa, and enjoy.
