Ingredients

Dry
Whole Oats (not quick cooking) = 2 cups
Whole Wheat Flour = 2 tblsp
Coconut Finely Shredded & Unsweetened = .5 cup
Ground Flax Seeds = .25 cup
Wet
Oil = .25 cup
Honey = .25 cup
Egg White = 1
Flavor extract (Coconut, Vanilla, what you like) = 2 tsp
Add last
Nut of choice (Walnut) = .5 cup
Dried Fruit bite sized = .5 cup
Tips
If you don't have parchment paper, spray cookie sheet with non-stick cooking spray. [I like parchment because, then I'm eliminating more oil.]
Directions
Mix dry ingredients first.
Then add wet ingredients, and mix thoroughly. Break up any big clumps stuck together with honey.
Finally add nuts and dried fruit, and mix again.
Use parchment paper to line cookie sheet. Spread granola evenly on cookie sheet.
Bake at 275 for 45 minutes. Check every 15 minutes and mix granola, so that it bakes evenly.
-or- Bake at 350 for 20-25 minutes. Check and mix granola every 7-8 minutes.
Let cool and store in air tight container or ziplock bag. Keeps for at least 1 week.
