Ingredients

    16oz Brown rice spaghetti pasta (Trader Joe's)
    1 oz pine nuts, chopped
    3 garlic cloves minced
    1/2 Tbsp olive oil
    1 1/2 lbs of fresh tomatoes, chopped
    2 tsp dried basil
    1/2 tsp kosher salt
    1/2 tsp pepper

Tips

My family loves to eat this with Al fresco sausage...I also like to sprinkle with parmesan & red pepper flakes.


Directions

Cook noodles according to package directions. Meanwhile, heat oil over med-high heat. Add nuts & garlic & cook until toasted, but not burnt (2-3 minutes approx). Add chopped tomatoes & basil. Cook on medium heat until it starts to break down (5-10 min) & then simmer for 10-20 min. Add salt & pepper. Drain noodles & rinse & then mix into sauce mixture.

Serving Size: makes 8 servings approx 6.8 oz each serving
