I got this recipe from my aunt and lightened it up. I like making it in winter with corn bought during the summer and cut off the cobs. The taste reminds me of summer! Number of Servings: 6

Ingredients

    4 T butter, softened
    2 T sugar
    2 T flour
    1 t salt
    2 eggs
    1/2 C egg substitute
    2 C fresh corn
    1 1/3 evaporated skim milk

Directions

Blend butter, sugar, flour and salt. Add eggs and egg substitute; beat mixture well. Stir in corn and evaporated milk. Pour into a buttered 2 qt casserole. Bake 45 min at 375, stirring *once* during baking. When done, the pudding will be golden brown and of custard consistency.

Makes 6 servings.
