Ingredients

    1/2 Tbsp olive oil
    1 medium onion, diced
    3 cloves garlic, minced
    1 cup red lentils, rinsed
    2 Tbsp chili powder
    1 Tbsp cumin
    1/2 tsp kosher salt
    2 cups water (or broth, nutritional info not included)
    15 oz can pinto beans, drained and rinsed

Tips

Adjust the spices as you like. Or you can use a prepackaged taco seasoning.


Directions

Heat the olive oil in a medium saucepan over medium heat. Add the onion and saute until softened. Add the garlic and saute 1 minute longer. Add the lentils and the spices, stir to coat the lentils. Add the water and bring mixture to a boil over high heat. Reduce to simmer and simmer covered for 20 minutes or until lentils begin to fall apart. Stir in pinto beans and heat through.

Serving Size: 6 servings for tacos, 4 servings as entree
