Number of Servings: 30

Ingredients

    8-9 Large ripe bananas (blackened peels)
    3/4 tsp Baking powder
    1tbsp Molasses (optional)
    1c Whole wheat flour (or whatever you have on hand)
    1-2 inches of oil in frying pan

Tips

Don't cook too many at once -- it makes them soggy!
Use more flour for less sweet and more cakey dumplings. Use less flour for sweet and gooey ones.
I assumed roughly half a cup of oil was being retained from bottom of pan.
Experiment with spices and sweeteners! I put chocolate chips in some and topped others with powdered sugar!
Difficult to flip so be careful!
Pureed bananas make the batter like pancakes, lumpy batter like hushpuppies.


Directions

Moosh bananas until mostly smooth, but with a few lumps left, combine with everything but oil.
Cover frying pan with 1-2 inches of oil and warm with medium heat. Spoon dumplings into oil a couple at a time and fry until golden brown. Repeat until batter is gone.

Serving Size: 12 dumplings (or however many you feel like dividing it into)
