Introduction
Prepped, measured, and stored for a salad a la Fuhrman for lunch or dinner. 1/4 the total recipe should give you about 8 ounces of veg to put on top of greens. Ingredients

20 ounces spinach (2 10 ounce bags of baby spinach) divided into 4 servings
Veggie/seed mixture:
1 cup each of
1. shredded cabbage
2. chopped onion
3. chopped zucchini
4. chopped broccoli
5. steamed mixed vegetables (peas, g. beans, carrots, corn)
6. chopped celery
7. chunked roasted carrots
8. rinsed and drained cooked chick peas (garbanzo beans, choose low or no sodium canned, or cook yourself)
2 oz. sunflower seeds
Tips
Combine from your veggies you have already prepped and stored in the refrigerator.
Directions
Mix together the 8 cups veggies and sunflower seeds and store in a covered container.
When ready to serve or pack for work: For each serving, top 5 ounces (1/2 of a 10 ounce bag of spinach) greens with 2 cups of the the salad veggie/seed mix.
You can add or substitute other cooked veg such as brussels sprouts, bright sweet tri-color peppers, etc. Be sure to track your greens and extra veggies. Using a total of 8 cups of veg makes it easy to divide into 4 servings.
Blended salad: I put 1/2 a serving veg and spinach with some water in my high speed blender with carrot juice or veg stock to drink with meal. Next time I'll add some herbs and seasonings.
Serving Size: Makes 4 large salads or 8 blended salads. I like to have this with Pizzazzy Oats N Eggs N Friends cooked crisp like a cracker.
