Introduction

A slightly adapted, cut-down version of a Trish Magwood recipe, these are full of all the taste that comes with a cucumber and tuna sushi roll, but without the rice or seaweed. Delicious, and very healthy! A slightly adapted, cut-down version of a Trish Magwood recipe, these are full of all the taste that comes with a cucumber and tuna sushi roll, but without the rice or seaweed. Delicious, and very healthy!

Ingredients

    1 English cucumber
    8 oz sushi grade tuna, diced
    1 tbsp sesame seeds
    freshly cracked pepper
    1 tbsp wasabi paste

Directions


With a mandolin, slice the cucumber lengthwise to create thin long strips.
In a bowl combine tuna, sesame seeds and pepper to taste.
Lay one strip of the cucumber flat, and spoon a small amount of the tuna at one (narrow) end.
Roll up like a sushi roll, and secure with a bit of wasabi.
Slice roll in half, and repeat with remaining ingredients.
Serve as close to preparation as possible.
