Introduction

Ingredients

    1-2 tsp cooking oil
    Spices to suit taste ie.. rosemary, oregano, celery leaves, cilantro, onion bits, garlic salt, what ever you are cooking as main dish.
    3 New Red or Yukon Gold potatoes per person average size 1/2"-1 1/2" split into halves or quarters as desired. (Regular potatoes can be used cut into 1"-2" chunks, but taste is not same.)

    Place potatoes in bowl after washing and patting dry.
    Sprinkle with spices, pour oil over potatoes and spices. Toss potatoes and spices until they cling to potatoes (can also be cooked without spices for "Plain Jane" effect) Oil makes the outer parts slightly crispy. Serve as side dish.

Tips

Can add bacon bits, parsley, oregano, rosemary, onion bits, garlic salt or whatever spices desired for the accompanying meal.


Directions

Place potato pieces in pan sprayed with Pam. Place in oven and bake about 10 minutes or until fork tender. This recipe works in all types of ovens. Cooking times may vary slightly.
