Ingredients

    1.25 c wheat bran
    1 c skim milk, soured with a bit of vinegar or lemon
    .5 c unsweetened applesauce
    1 egg
    1 T molasses
    .5 c AP Flour
    .5 c WW Flour
    1 t baking powder
    .5 t salt
    1 t baking soda

    Soak the wheat bran in the milk for 10 mins to soften. Combine additional dry ingredients and set to the side. In mixing bowl combine applesauce, brown sugar, egg, and molasses. Mix well. Add wheat bran mix and mix in. Add dry ingredients and mix until just combined.

Directions

Preheat oven to 400 degrees. Line a muffin tin.
