Ingredients

    2 pork chops, boneless, trimmed
    1 egg
    1/4 cup grated parmesan cheese
    1/4 cup almonds, finely ground
    1 tsp cajun seasoning

Tips

Almond flour may be used for the ground almonds or you can grind your own in a food processor or coffee grinder.


Directions

Preheat oven to 350°
Mix ground almonds, parmesan, and cajun seasoning in a plate. In another plate, whisk egg with a fork.
Dip pork chop into egg, then breading, and place in a baking dish sprayed with cooking spray. Repeat with 2nd pork chop.
Bake in oven for 35-40 minutes or until meat is white and cooked through.

    Incredible!
    We really liked this. I used boneless loin chops. I could have easily gotten 4 out of the "breading". I would cook the boneless chops about 20 minutes though as mine turned out dry.

    Very good and I made exactly as written. I think it (the "breading") needs something though..maybe more seasoning? Chops were very moist and tasty. - 2/24/16
