Number of Servings: 4

Ingredients

    4 cups Organic Vegetable Broth
    1-2 cups water (if needed)
    2 carrots
    2 celery stalks
    1/4 medium white onion
    2 mushrooms
    2 tomatoes
    1/4 bell pepper - color is your choice
    1 Tbsp Taco Seasoning (any brand)
    1 jalapeņo pepper (or less or omit)
    1 15 oz can of black beans, drained and rinsed

Tips

Many variations with this base:
Need more calories? Before pouring, add corn to the soup and blend on low just to mix it all in. Slice some avocado on top after you've poured the soup into bowls. Add crushed tortilla chips on top.
Non-Vegan? Add a dollop of sour cream on top after you've poured the soup into bowls.
Non-Vegetarian? Add your choice of meat (turkey, chicken) at the very end. Blend on low for a minute to mix in.

Directions

Heat broth to almost boiling (you can skip this step if you want to use the Vitamix exclusively to heat as well). Pour into the large Vitamix container, add vegetables, cut in half if needed to assist in blending. Start Vitamix on low and gradually increase to high, leaving on for 3 to 4 minutes, until soup is steaming. Turn Vitamix off and add taco seasoning and jalapeno and beans. Start Vitamix again on low and gradually increase to high for another couple of minutes to ensure soup is blended smooth and hot.

Serving Size: Makes 4 large soup bowls full or 8 appetizer-sized cups
