Ingredients

1/2 cup Eggbeaters
1 whole egg, beaten
1/2 cup Bean Sprouts, chopped
1/2 TBL red onion, diced
1/2 tsp sesame oil
1/2 tsp low sodium soy sauce
Dash of black pepper
1/3 TBL low sodium soy sauce
1/3 cup cold water
Tips
You can try substituting different proteins for the egg....1/4 of a lean...such as chicken, shrimp, turkey or even tofu. And you can use other greens...even add greens if you want! Just be sure to count them.
Directions
Mix everything but the cornstarch substitute, 1/3 TBL of the soy sauce and 1/3 cup water. Pour into a PAM-sprayed hot skillet and fry over medium-high heat for 3-4 minutes per side. Makes about 5 pancakes.
In a separate small saucepan, combine the Cornstarch substitute, 1/3 TBL of the low sodium sauce sauce and 1/3 cup water. Mix well. Heat until boiling point where it will thicken. Remove from heat.
Serve sauce onthe side of the pancakes.
