Introduction

Using carrots makes this look and taste like traditional mac and cheese! You won't even miss it! Using carrots makes this look and taste like traditional mac and cheese! You won't even miss it!
Number of Servings: 8

Ingredients

    *1 can carrots (well drained and patted dry) or about 2 whole carrots cooked
    * 2 tsp mayo or sour cream
    *ronzoni smart taste (or wheat or other desired type) elbow mac
    *1 cup milk 1%
    *1/4 cup parmesean cheese shredded style
    * 1/2 cup cheddar cheese
    salt, pepper and garlic to taste

Directions

Makes about 6 dinner sized servings or about 8 side dish sized

Boil water to make one package elbow mac.

In a food processor combine one can of cooked carrots (or about 2 carrots cooked) and 1 tsp mayo.

Once water is boiling add mac and cook according to directions.

In seperate sauce pan, combine carrot mix, both cheeses and spices.

When pasta is done add sauce and milk to desired consistency. Top with additional parm if desired and serve!

Sometimes I'll add a little light sour cream in the sauce if I have it-it makes it creamier. I add salsa, or brocolli to my leftovers for a twist the next day.

    Very Good
    Need new food processor to make smooth sauce instead of chunky sauce, but otherwise very tasty. Need alternate to cheddar cheese; it does not melt well at all! I will play with the ingredients and come up with something that works. Definitely making again! - 9/8/09
