Ingredients

    1 quart low-sodium vegetable stock
    1 (15 ounce) can white beans, drained and rinsed
    1 medium onion, diced
    2 stalks celery, diced
    2 carrots, diced
    6 cloves garlic, thinly sliced
    1 fresh jalapeno
    1 tablespoon chopped fresh rosemary
    1 bay leaf
    2 whole cloves
    6 cups of spinach, washed and chopped
    1/2 cup fresh parsley, chopped finely
    lemon juice and zest from one lemon

Tips

Try replacing the spinach with mustard greens, turnip greens, collard greens, arugula, or lacinato kale!


Directions

Add all ingredients except for lemon juice and spinach to large pot. Bring to a boil, turn down and simmer for 20 minutes. Add spinach and cook for 10 minutes more. Stir in lemon juice and fresh parsley right before serving.
