Ingredients

    6 links Hot Italian sausage (casings removed)
    1 tbsp Minced Garlic
    1 Sweet Yellow Onion Diced
    1 14 ounce can of Low Sodium Black Beans
    1 pk of frozen chopped collard greens
    1 14 ounce can of Low Sodium Diced Tomatoes
    1 small can of tomato paste
    6 cups of Low Sodium Free Range Chicken Broth

Tips

You can substitute hot turkey sausage, but I find it's less spicy so when I do. I brown the sausage with some red pepper flakes for a little more zip.


Directions

Crubmle and brown the sausage in it's own fat, with the garlic and onion until the sausage is cooked through.

Add the can of tomato paste and stir in well.

Rinse the black beans, add them and the rest of the ingredients to the pot and let it simmer for 30 minutes. It also works well in a crock pot. This is one of those soups that's even better the next day.
