Meant to be a main dish served cold, but it goes great with Kofte. Meant to be a main dish served cold, but it goes great with Kofte.
Number of Servings: 6


    1 cup fine bulgur (cracked wheat)
    2 tbsp olive oil
    1 onion, diced
    2 tbsp tomato paste
    1/3 cup lemon juice
    tsp salt
    1 tbsp cumin
    2 tomatoes, diced
    4 fresh green onions, diced
    1 cup chopped parsley
    tsp mint


Serve with lettuce, or pickles.


Put the bulgur in a large bowl, and cover with 2 cups of boiling water. Leave it to sit for about 5 minutes, and fluff with a fork. The bulgur should be tender, and the water completely absorbed. Chop and toss all the ingredients into the bulgur, and then place it in a glass dish lined with lettuce leaves for presentation. Top with a few sprigs of parsley. Let it cool, and serve.
