My Weight Watchers-friendly version of Blackeyed Pea salad.

Ingredients

    1 15 oz can Blackeye Peas, drained and rinsed
    1 15 oz can Yellow Corn, drained
    1/4 cup red wine vinegar
    1/2 cup fresh tomatoes, diced
    1 cup jicama, diced
    1/4 cup yellow onions, diced
    1 stalk green onion, sliced
    1/2 cup red bell pepper, diced
    1/2 cup green bell pepper, diced
    1/4 cup fresh cilantro, minced
    1/4 cup fresh parsley, minced
    1 tsp garlic salt
    2 packets, Splenda or Stevia sweetener
