Ingredients

    1 C. Vinegar
    1/4 C. sugar
    dash of salt
    1 C. water, cold
    4 Cucumbers cut in slices (thin to medium thickness)
    3.5 Tomatoes sliced thin to medium thickness
    1 Medium sweet onion (red or Vidalia) sliced thin

Tips

Make the night before for best results.


Directions

Heat vinegar, sugar and salt in a sauce pan on medium heat. Stir as you bring to a boil. Immediately turn off heat once boiling and add cup of cold water to cool the vinegar.

In a container (glass is preferred, like a mason jar), add cucumbers, tomatoes, onions and olive oil. Pour the vinegar/water mixture over the vegetables and gently mix around. Close the lid tightly and store in the refrigerator. Allow the salad to marinate at least an hour. It's much better when it has marinated for 6-12 hours.
