Ingredients

    3 Cucumbers (skin on)
    1 package Chrubs Cherry Tomatos (or any other cherry tomatos)
    1 4oz package of Feta Cheese
    3 tbsp Olive Oil
    3 tbsp Basalmic Vinegar
    .5 tsp Kosher Salt
    .5 tsp Black Pepper

Tips

The salad can get soggy if not served immediately. If you are prepping a head of time, consider using a strainer to remove excess water before serving.


Directions

This is a raw food recipe

Slice cucumbers as desired (I put them through my spirooli slicer (also known as the Paderno World Cuisine 3 in 1 slicer))

Cut cherry tomatos in half (lengthwise)

Combine feta, sliced cumbers, and sliced tomatoes in bowl and toss with olive oil, salt, pepper, and balsamic vinegar. Serve immediately.

Serving Size: Makes about 10 1-cup servings
