Ingredients

    1 1/4 c. dried Lentils (Trader Joe's Small Green Lentils)
    1 large onion, chopped
    2 carrots, chopped
    2 celery stalks, with leaves, chopped
    2 cloves of garlic, chopped
    1/3 c. fresh parsley, chopped
    1/2 of a 15 oz can of Tomato Sauce
    1 bay leaf
    6 T. Extra Virgin Olive Oil
    1 tsp. salt
    black pepper to taste

Tips

Goes well served over brown rice.


Directions

Sort beans, remove rocks and any bad beans. Put all ingredients (except salt & pepper) in a medium sized pot and cover with water. Bring to a boil, reduce to a simmer, and cook for about an hour. Add hot water as needed, this soup thickens significantly as it cooks. After beans are completely cooked, add salt and pepper to taste and serve.
