Ingredients

    1/4 cup onion
    2 T coconut oil for saute spice
    1 T black mustard seeds
    2 tsp fenugreek seeds
    1 T ground turmeric
    1/2 cup mung beans
    1/2 cup brown basmati rice (or other long grain)
    1 cup any veggie, like sweet potato or squash
    1 cup any greens, like kale

Tips

Traditional Ayurvedic digestive recipe. Good to eat this daily and vary the veggies with whatever you have on hand. You can also add a sharp tasting cheese.


Directions

Heat coconut oil in heavy bottom pan. Saute black mustard seeds, fenugreek and turmeric for 3 to 5 min on medium heat until browned. Add onion, saute another few minutes. Add beans and rice, stirring frequently. Add water and other veggies. Cook on low heat for an hour until beans and veggies are soft.
