Ingredients

    1 med yellow onion diced
    1 cup raw carrots diced
    1 Tbsp. Olive oil
    2 garlic cloves minced or grated
    3 plum tomatoes diced
    1- 14.5 oz Can of diced tomatoes no salt added
    1-14.5 oz can of low sodium chicken broth
    pinch of sea salt
    pinch of black pepper
    pinch of red pepper flakes
    3 oz. Greek yogurt plain
    3 oz of almond milk unsweetened
    10 fresh basil leaves

Directions

Dice onion and carrot. Saute in skillet with olive oil about 5 min. Dice tomato and garlic add to pan.Next, add canned tomato,chicken broth, salt,pepper, and red pepper flakes.Cook uncovered 35-40 min.Let cool slightly. Add basil to tomato mixture tearing the leaves,then put all in blender and puree until smooth.Put mixture back in skillet and stir in yogurt and almond milk. Cook over low heat 5 min.

Serving Size: makes 4- 1 cup servings
