Introduction
Toss all veggies except tomatoes, spinach, and 1 clove garlic in 1 1/2tbs olive oil, grill or roast, and set aside to cool. separate garlic and slice remaining vegetables into bite size pieces. finely dice 1 clove garlic and 2 tbs white (or other preference) onion and cook with quinoa. puree remaining garlic, lemon juice, 1/2 tbs olive oil, and 1 1/2 tbs water in blender or food processor to make dressing. cool quinoa partially, combine with vegetables and toss with dressing, adding salt and pepper to taste, until all ingredients are thoroughly mixed. finish cooling in refrigerator and serve. makes 4-5 servings. 6 oz Spinach - Dole Baby Spinach in a bag (3oz)
0.30 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
.66 cup 365 Organic Quinoa
15 spear, medium (5-1/4" to 7" lo Asparagus, fresh
1 tbsp Extra Virgin Olive Oil
Tips
use any veggies you'd like, i just like these :) I may add cheese to this when I make it again- it could be good with goat/feta or mozzarella- I just didn't have any on hand. also could be good with diced chicken breast added.
