Introduction
This is a modification from Kentucky Burgoo Recipe I found at simplyrecipes.com I've omitted the meat and includes beans in their place. I've also changed it up a bit for my preferences. I've added Salsa to the mix to kick it up a bit. The worcestershire sauce is not vegan unless you buy vegan worcestershire sauce. I've made it both with 1 quart of broth and with 2 quarts. This makes a lot of soup, and I found the 1 quart fits in my large crockpot a little easier. Ingredients

Leitha's Vegan Kentucky Burgoo
1 green or red bell pepper, chopped
1 small onion, chopped
2 carrots, chopped or petite carrots tossed in
2 celery ribs, chopped
5 garlic cloves, chopped
1 quart Veggie stock or broth
2 14.5 ounce cans of crushed tomatoes
1 cup of salsa
1/2 bag of frozen corn (about a pound)
1/2 bag of frozen lima beans (about 14 ounces)
1 can garbanzo beans rinsed
1 can kidney beans rinsed
1 bunch of collard greens
Salt and pepper
4-8 tablespoons vegan Worcestershire sauce
Tips
I find that the longer I cook this, the better, and the next day is the best soup. Very filling and nutrient dense. Great for ETL diets.
Directions
Mix and cook all ingredients for 6-8 hours at low simmer.
