Ingredients
4 chicken breasts - boneless, skinless
salt, pepper, paprika to taste
1 tablespoon olive oil
Sauce Ingredients:
1 medium onion - chopped
.25 cup brown sugar
1/2 can pineapple chunks
1/4 cup apple cider vinegar
1/4 cup raisins
1 Tablespoon ginger
1/2 cup chicken broth
1/2 teaspoon cinnamon
1 teaspoon tumeric
1 Tablespoon arrowroot (thickener)
Tips
I serve this with a vegetable stir fry shown in the photo for a lean low cal and tasty dinner!
Directions
Brown chicken in olive oil on both sides for 3-4 minutes. Then pour in chicken broth and a little water if needed, and saute until done.
In separate large sauce pan combine: onion, brown sugar, pineapple chunks, apple cider vinegar, raisins, ginger, cinnamon, tumeric and stevia packets. Heat & stir. Combine arrowroot and 1/2 cup water and stir until blended. Pour into the saucepan and heat for about 5 minutes until whole mixture is thickened. If needed you can add some additional water.
When chicken is cooked and tender, serve onto plate and pour sauce mixture over top.
