Ingredients

3 boneles skinless chicken breast w/ rib meat
1 cup pineapple chunks in pineapple juice no sugar added
1/2 cup brown sugar
(may substitute low calorie brown sugar blend)
5 cloves garlic
1/2 cup low sodium soy sauce
1 can diet lemon-lime soda
Directions
Marinade:
Peel, crush and chop garlic cloves. Combine pineapple with juice, brown sugar, garlic and soy sauce in microwaveable dish. Heat on high for 1 min. Stir until brown sugar is dissolved thoroughly.
Cut chicken breasts into thirds. Place in shallow glass or plastic pan. Cover with marinade. Add soda and gently agitate. Place in refrigerator for at least 2 hours. Longer allows for more flavor to seep into chicken.
May also be cut into cubes, marinated and put on skewers. Perfect for kid size portions.
GRILL chicken on barbecue, or grill pan until cooked through. Serve with your favorite rice dish or macaroni salad.
