Ingredients

    3 TB butter or margarine
    4 parsnips, peeled and sliced
    3 ripe or over-ripe pears, peeled and sliced
    3 cloves garlic, chopped
    1 small onion, chopped
    2 C Kitchen Basics low sodium Vegetable Broth
    3 Bay leaves

Tips

If soup is too thin, add mashed potato
If too thick, add water or broth.
Chicken broth also good substitute


Directions

Add butter to large cooking pot. Melt and add parsnips, onion, garlic, pears. Cover and let ingredients brown and soften. Lower heat and add broth and bay leaves. Simmer for 40 min- 1hr.

Blend with hand mixer or blender.
