Ingredients

    Spaghetti Squash, 2 cup (1 medium, baked)
    sweet yellow onion, raw (1/2 medium onion)
    Butter, salted, 2 tbsp
    Sour Cream, 1/2 cup
    Cheddar Cheese, 16 oz
    Kosher Salt, 2 tsp
    Pepper, black, .5 tsp
    Garlic, .5 clove

Directions

half/seed and bake squash til tender (about 1 hour at 350)
in large skillet, lightly caramelize onions in butter
add garlic, salt & pepper
scrape spaghetti squash into pan and mix
add sour cream
spread evenly in skillet (or in casserole dish)
top generously with cheese
bake for 15-20 minutes at 375 til cheese forms a crust.

Serving Size: makes 6 large portions

    Wanted something to go with my turkey for Thanksgiving. This is easy to make. I loved it! Thank you for posting it! I'm not sure what is wrong with the ratings on this. It would only let me give it a 1, this should have received a 5!!! - 11/27/14
