Ingredients

2 large sweet potatoes (orange flesh), cut into approximately the same sized slices
1 cup unsweetened apple juice
1/4 cup Splenda brown sugar mix
1/4 chopped walnuts (optional)
1 tbsp. honey (optional)
Directions
1. Peel 2 large sweet potatoes and slice into approximately 1/2 inch slices. Arrange slices evenly in the bottom of a 9x13 baking pan
2. Sprinkle 1/4 cup of Splenda brown sugar mix over the sweet potatoes
3. Pour 1 cup of unsweetened apple juice over the sweet potatoes/ brown sugar. Allow to sit unrefridgerated for about 30 minutes.
4. Sprinkle 1/4 chopped walnuts (or pecans) over sweet potatoes, if desired.
5. Cook at 350 degrees for approximately 40 minutes, or until sweet potatoes are tender by not mushy.
6. Remove from oven and allow to cool slighly.
7. Drizzle with 1 tablespoon of honey, if desired.
