Introduction

Number of Servings: 12

Ingredients

    1 1/4 c. flour
    3/4 c. cornmeal
    1/4 c. sugar
    2 tsps. baking powder
    1/2 tsp. salt
    1 cup 1% milk (you can use skim)
    1/4 c. canola oil
    2 eggs

Tips

For a change you can add a teaspoon of jam and drop it on top of the dough in the muffin tin. (Remember to add more calories if you do)


Directions

Mix together flour, corn meal, sugar, baking powder, salt, milk, oil and eggs until smooth. Fill muffin tins up stopping at a 1/4 inch from the top. Bake at 400 degrees for 20 to 25 minutes.
