My take on fish tacos My take on fish tacos
Number of Servings: 8

Ingredients

    6 flounder fillets (or other white fish) (frozen)
    1 can sweet corn, drained of fluid
    1 can black beans, drained of fluid
    juice of 1 lime
    1 packet taco seasoning
    1 packet ranch dressing powder
    cilantro to taste
    8 small tortilla shells
    Spring salad mix.

Tips

I made this up as a way my family might like fish tacos based on what I remembered it tasting like in a restaurant. Turned out very good!


Directions

Mix the corn, beans, lime juice, and packets together in a bowl. Add cilantro and other seasonings as desired. Put the frozen fish in a 9X13 baking dish. Top with the mix. Cover with aluminum foil and bake at 350 degrees for 30 minutes. Put spring salad on a tortillas shell, top with the bean and corn mix and then top with some of the fish. Enjoy!
