Introduction

Got the original recipe from a hippie chick back in the 70's! I only changed the ground beef to ground turkey. I am baffled by the calorie count though. I have double checked the ingredients and amounts so I guess it must be right. It is high in sodium. I didn't have any low sodium tomato sauce so here's hoping it is correct. Ingredients

    2 Cans 29 oz ea Tomato Sauce
    1 Tbs Cilantro (dried)
    1 Tbs Cumin (dried)
    1 Tbs Paprika
    1 Tbs Chili Powder
    1 lb Ground Turkey
    2 Cups Onion Raw chopped
    1 Can large Pitted Black Olives chopped or crumbled
    2 Cups Monterey Jack Cheese Shredded
    2 Cups Sharp Cheddar Cheese Shredded
    7 Flour Tortillas

Tips

This dish tastes best a day after baking. It freezes really well.


Directions

Preheat oven to 350 Deg.

-Combine tomato sauce into a sauce pan add Cilantro, Cumin, Paprika and Chili Powder. Simmer for 25 min stirring occasionally.

-Brown Ground Turkey drain off fat.

Chop onions and crumble black olives.

Use a Lasagna size pan. 10.5 X 14.75 X 2.25H
Spread some sauce on the bottom of pan. Layer in the following manner, flour tortillas (2 or 3 plus you may have to break a 4th one to fit the rest of the pan) ground turkey, onions, black olives cheese and sauce.
I find using a liberal amount of sauce adds good flavor to the enchilada loaf. If you have any cheese left top off the loaf with it.
Bake in 350 deg ovens covered for 30 min. Take foil off and bake an additional 15 min for cheese to melt.


Serving Size: Makes 12 big slices
