Ingredients

    *1 cup Lentils (dry)
    *1 each Onion, raw, diced
    *8 cloves Garlic , minced
    *2 cups Water
    *3 cans Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano
    *2 each Carrots, diced
    *4 each Mushrooms, chopped
    *1 tbsp Extra Virgin Olive Oil
    *6 cups Vegetable Broth
    *3 tbsp Dry Oregano
    *3 tbsp Dry Basil
    *2 tbsp Chili Powder

Directions

-Heat olive oil in large pot
-Cook onions and carrots until they start to brown slightly, about 8 minutes
-Cook mushrooms and lentils for about 5 minutes, just to slightly toast the lentils
-Add garlic and cook until fragrant, about 30 seconds
-Add canned tomatoes, water, vegetable broth, and spices, cook for about 45 minutes or until lentils are fully cooked
