Ingredients

    Olive Oil, 2 tbsp
    Onion, 1 medium (2-1/2" dia)
    Green Bell Peppers, 1 cup, chopped
    Green Beans (snap), 2 cups
    9 plum tomatoes, chopped (or 28 oz. can)
    2 garlic cloves, diced
    Artichokes, frozen, 1 package (9 oz)
    Beans, Kidney beans dark red 2 cans
    Vegetable Stock, 3 cups
    Red pepper flakes, 0.5 tsp.
    Saffron threads, 0.25 tsp.
    Bay leaves, 2
    Salt and freshly ground pepper
    Saffron Yellow Long Grain Rice, 1 pkg.
    Peas, canned, 1 cup

Directions

Saute onions in olive oil until soft. Put onions and all other ingredients except rice into slow cooker on low for 4 hours. Add rice and cook on low for another hour.

    So yummy! Everybody took two helpings and my daughter wanted it in her thermos for lunch. I cooked it for way more than 4 hours - so put in on low while I was at work all day. Need to remember to turn up the heat when I put the rice in though. - 12/7/10

    This was pretty good I must say. It doesn't freeze very well though, the artichokes get all mushy. It's a really "different" kind of meal - lots of vegetarian recipes on here are Mexican, so it's nice to have a change! - 2/11/16
